What we actually mean
Fusion, not a buzzword
Plenty of places use “fusion” to mean a long menu. We mean something narrower: the traditions meet inside the dish.
Nepali food is already a fusion cuisine and has been for centuries. It sits where India, Tibet and China meet, which is why a Nepali kitchen serves dumplings, noodle soup and curry without anyone finding it strange. Momos came from Tibet. Chowmein came from China. Both are now completely Nepali.
So when we put fried chicken in a bao bun, or pile sekuwa-spiced meat onto chips, we’re doing what Nepali cooking has always done, one border further along. Read more in our guide to Asian fusion food.
